Hi there, jolly friends of the North Pole! 🎅✨ It’s Elf Heidi here, and today, I’m sharing a warm and cozy recipe perfect for chilly winter nights by the fire (or, in our case, keeping warm while making toys in Santa’s workshop)! This Apple Spice Cake with Cinnamon Buttercream Frosting is like a hug in cake form—sweet, spicy, and just the right amount of holiday cheer. 🎄
You’ll need a couple of cake pans and a lot of holiday spirit to bring this delightful treat to life, so grab your aprons, gather the family elves, and let’s get baking!
🎂 What You’ll Need:
For the Cake:
2 cups all-purpose flour (270 grams)
1 cup sugar
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
4 large eggs (you can borrow some from Mrs. Claus's kitchen!)
1 cup vegetable or canola oil
1 cup applesauce (for that extra moistness)
1 teaspoon vanilla extract
1 large apple, peeled and diced into ¼-inch chunks (Honeycrisp is my favorite, but Granny Smith works too!)
For the Cinnamon Buttercream Frosting:
1 cup butter, softened (leave it out for a bit while you bake!)
4 cups powdered sugar
2–3 tablespoons milk
1 tablespoon vanilla extract
1 teaspoon cinnamon
